Scrambled Eggs Vegetables Recipe
Healthy scrambled eggs vegetables recipe-is not only for breakfast, but it can be cook to make healthy stir frying dishes as well. This scrambled egg vegetable stir fry only takes 20 minutes. Scrambled eggs vegetables can be served with noodle, rice or as a side. It is another low effort recipe to prepare a quick weeknight meal. When all the ingredients are in, use soy sauce and salt sauce for seasoning. It make you enjoying this natural flavor of this ingredients.
1 egg (beaten)
4 tablespoons oil
1 carrot (shredded)
½ tablespoon soy sauce
1 long green pepper (sliced)
2 cloves garlic (sliced)
1 bunch enoki mushrooms ends trimmed and cleaned (or your choice of mushroom)
¼ teaspoon salt
- Heat 1 tablespoon oil in the pan over medium heat, then pour the egg; wait for the egg to set and then, break it into small pieces with a spatula, keep stir fry about 30 seconds until fragrant set aside.
- Add 3 tablespoons oil into the pan; stir in the green pepper and carrot, stir fry about 1 to 2 minutes over medium high heat.
Add garlic slices and enoki mushrooms into the pan, and toss in some soy sauce and salt, stir fry about 2 to 3 minutes and mix well.
- Add the egg back, into the pan. Cook for several minute and serve.
