Creamy Chicken Potatoes Slimming World Curry

794g boneless and skinless chicken thighs or breasts. Cut into bite sized pieces
1 onion. Peeled and chopped finely
4 large potatoes. Cut and Peeled into large bite sized pieces
170g baby leaf spinach; chopped roughly
2tbsp medium or hot curries powder
400g can of chopped tomatoes
Freshly and ground black pepper
A large chopped coriander handful and mint leaves
- To make your chicken curry place a large. Non stick of frying pan over a medium heat. When hot, add the onion, potatoes, curry powder, chicken, spinach and then stir mix well. Stir fry for around 2-3 minutes.
- Add the chopped tomatoes and 397 ml water and bring it to the boil. Cover and reduce the heat becomes low and cook gently for around 25-30 minutes or until the potatoes and chicken are cooked tender and through.
- Remove from the heat, and season well with black pepper and salt. Stir in the chopped herbs and then serve immediately for 4 people.
